This pic doesn't do this meal justice. Taco seasoned ground turkey w/onions & yellow peppers, quinoa, and thousand island yogurt dressing. It would have been even better if I had iceberg lettuce. This is a perfect meal to prepare a ton of and eat for days. I'll be bringing this with me when I go out of town for Thanksgiving. I'll double my dinner recipe tonight as well so I have some more meals prepped for the holiday weekend. Prepare, prepare, prepare!!!
